We temporarily halted our food subscription box a few weeks ago. I felt pressured to have to cook two fancy meals during a busy time and times were busy with the end of the school year. You get it, right? So, the other day when hubby said we should start it back up again, I reminded him that it would take about 3-5 days and that I would find a recipe on Pinterest for the night.
Boy, did I!
I was craving fish tacos, but instead found this grilled shrimp taco recipe by The Girl Who Ate Everything. Sometimes these recipes on Pinterest can be hit or miss. If you follow my Very Yummy board you can get a sense of the types of food I want to cook.
After subscribing to a food sub box, I’ve become more comfortable with cooking different foods more and not taking the easy way out. You know, a simple meat which was usually baked or fried, one veggie and maybe a roll.
I also want to introduce the kids to different foods. Neither one of them tried the shrimp tacos, but that was ok because it meant more for my husband and I.
You can find the full recipe here. I actually had some pre-made guacamole packets I had from Trader Joe’s at home already instead of using a fresh one. I can’t tell when the fresh ones are ripe so this worked well. It may have even added a bit more flava!
But just so you know, I couldn’t find the red cabbage at the store nor did I have cumin. Instead, I used the every so flavorful Arugula in place of the cabbage, and used red pepper in place of cumin.
This was so good I can’t wait to make it again. The salsa was the star of the show. Although the recipe didn’t call for it, I added both tomatoes and feta cheese because feta makes everything betta! I may sub chicken for the shrimp next time.
