An impromptu Cupcake Wars popped off in my home last week out of nowhere. I recently supervised the kids as they made gluten-free chocolate cupcakes sent to me by Simple Mills last week while they were off school. Launched in 2013, Simple Mills makes 14 products that incorporate natural baking mixes and crackers that combine whole-food goodness with five-star taste and texture.
The kids had a great time making the cupcakes and only had one mishap. Very ironic that they were learning about measurements in class when my son mistook 1/3 cup for 1 1/3 cups (I have a 2-cup measuring cup) and totally watered down the batter. But, we ran to Target where I was able to purchase another box for $7.99. Yes, that’s higher than other cake mixes, but the quality and taste were not sacrificed.
I grew up learning how to bake all sorts of goodies like biscuits, cakes, and cookies but at some point I stopped. I can’t explain why, but my specialties that I recall were peanut butter cookies with the criss-cross impressions and cinnamon snickerdoodles. Oh, I can’t forget chocolate chip cookies.
But what’s different in the sweets I grew up baking is they were filled with the fattening, bad stuff that fills your waistline. Simple Mills leaves the artificial ingredients to other brands setting a new benchmark for natural foods. They help families encourage healthy eating habits helping them eat and feel better.
What makes Simple Mills special? They use almond flour, coconut flour, cassava, tapioca, flax, arrowroot, cocoa, and coconut sugar.
After they kids put their personal touches on their cupcakes (which probably no longer made them gluten free….), we then had a taste test. I didn’t tell them that they were gluten-free fearing that it would prejudice their reaction.
Neither kid nor my husband noticed the difference between the leading brand of cake mix and Simple Mills. My husband even said how moist they were! They were absolutely delicious!
