Korean Sesame Mahi-Mahi and Spinach Salad: Home Chef Does the Meal Prep for You

Just like you, I don’t want to cook everyday and I don’t have to when there are companies like Home Chef who practically do the work for you.  When it comes to cooking a gorgeous, gourmet-like meal, I have zero capability to make it happen.  This Chicago-based meal kit delivery service, is expanding service nationwide and I want to be the first to tell you just that.

After a long day at work, homework with the kids and of course after school activities, who wants to whip up a healthy meal? This is why our kids are overweight because it’s so easy to run to the drive thru or grab a pizza to fill their already expanding tummies.

But there are options!  I have been wanting to try out one of these food subscription boxes and Home Chef made the process so easy. Their weekly meal delivery service has everything you need for a delicious and healthy home cooked meal.  A few things that it didn’t have were simple ingredients like cooking oil, salt/pepper and another ingredient I can’t recall right now.  A pan? Maybe that was it….But you should have these items anyway.

The food came prepackaged ready to go.  One downside is that I noticed at least 2 of the plastic bags had holes in them.   While the freshness wasn’t compromised, I did lose some of my spinach as I opened it over the sink for a quick wash.  Luckily I had some arugula in my refrigerator so I had to mix the spinach with what didn’t fall in the sink with arugula.

I received two meals for ingredients to make Korean Sesame and Chile Roasted Mahi-Mahi with Spinach Salad. The other recipe was Mushroom Parmesean Penne Pasta which I didn’t make in time for the posting of this review.

Here is how my first time cooking with Home Chef went:

The ingredients were all prepackaged, fresh and ready to go. As mentioned, the recipe called for me to julliene the veggies which I simply sliced. 

You also get a plastic binder with three hold punched recipes which allows you to keep them in one place. 

The mahi-mahi was pretty small, but the other food items made up for it. It may be a light for an adult male.

I personally think this is the best option for busy families and of course we who do not like to cook. #raiseshand

It actually took longer to prepare it than suggested.  I don’t know how to julienne vegetables correctly so I did the best that I could.  I also didn’t use the 2nd packet of honey but not because I chose not to.  I didn’t know I had to put both in it and forgot I had two of them, but it didn’t alter the recipe very much.

Although the portions were for two people, we allowed the kids to take a taste and one liked it and the other was a little more critical.
